Polishing is actually the process of removing the tiny layers of clear coat/paint on the exterior of the car. Why on earth are you removing any layers? When done right and using the correct wax or wax sealer, the benefits of polishing include, but are not limited to:

Polishing helps remove scratched clear coat layers for a smoother, brighter and shinier finish. Think of it as sanding a rough piece of wood, it's the same type of process. However, for cars, it's important to use the right type of compound (paste wax, liquid wax, etc.) that can mix with the paint and create a sheen. Additionally, wax or wax sealants help provide an extra layer of protection to the exterior elements.
Polishing can be done manually or using an electronic high-speed buffer. The latter method should be done by a professional, as the cache can be damaged if not handled properly.
